Eggless Date Walnut Cake- The one I baked for my birthday!

Eggless Date Walnut Cake!

June is my favorite month because that's when the monsoons hit and everything changes. Buh-bye summer and welcome rains! And of course, its my birthday! This time I decided to bake an eggless date walnut cake my myself. Now, I am not too fond of the icing and food colour that is added in commercial birthday cakes. So this option was preferred and the cake turned out very delicious. This is one cake recipe you must try! Also, this cake tastes the best after a day or too. If you are planning to bake it for a particular occasion, plan it accordingly. As promised on the recent youtube video ( in which I reviewed Xiaomi Mi4i mobile phone), here is the recipe.






You'll need:

1) 23 deseeded dates
2) 1 1/2 cup milk
3) 1 bowl sugar
4) 1 bowl ghee
5) 1 bowl all purpose flour
6) 1 bowl Ragi Sattva ( Also, called as Nachni sattva. Buy the one without added sugar)
7) 1 tsp baking soda
8) Handful of small walnut pieces

Procedure:

- Soak the deseeded dates in milk for 5 hours. 
- Pour the milk and dates mixture in the mixer. Add sugar and ghee and grind well until it becomes a fine paste.
- In a large bowl sieve and add the all purpose flour, ragi sattva and baking soda.
- Add the dates paste to it and blend well.
- Roll the walnut pieces in all purpose flour and add it to the mixture. ( So that the walnut pieces don't sink to the bottom)
- Pre heat the oven at 160 degree Celsius and bake for 35 mins. 

Voila! Eggless date walnut cake is ready :)
